Why is it important not to touch the white area surronding my tooth extraction site with my tongue?

I had a tooth pulled on the 2nd and everything is fine. And I have a white area that is surronding my tooth extraction site which is normal. I was told that i should not touch this area with my tongue or finger.I was wondering if anyone knew why?

Infection. It can cause infection. Told the same thing.
